Ingredients
  • 2 (6-ounce) salmon fillets
  • 1 teaspoon vegetable oil
  • 4 tablespoons butter
  • ¾ cup finely diced shallot
  • 1 tablespoon minced garlic
  • ¼ teaspoon crushed red pepper
  • 1 tablespoon lemon juice
  • ½ teaspoon lemon zest
  • 1 tablespoon chopped fresh dill, plus more for serving
  • ¼ cup vegetable broth

  • Flaky sea salt, for serving
  • Lemon slices, for serving
Directions
  1. Pat the skin side of the salmon with a paper towel to absorb any moisture.
  2. Bring a medium, heavy-bottomed skillet to high heat and add vegetable oil.
  3. Place salmon in the pan skin-side down. Sear for 3 minutes.
  4. Flip salmon and cook for another 3 minutes.
  5. Transfer salmon to a plate, skin-side up.
  6. Reduce heat to medium and add butter to the skillet.
  7. Once melted, add shallots and garlic. Cook for 2 minutes, until the shallots are soft.
  8. Add crushed red pepper and cook for 1 more minute.
  9. Reduce heat to medium-low and stir in the lemon juice, lemon zest, dill, and broth.
  10. Once broth is bubbling, return the salmon to the pan, skin-side up, and cook for 3 more minutes. Remove skillet from heat.
  11. Garnish with flaky sea salt, lemon slices, and extra dill, if desired, and serve.
