Herb-Roasted Beef Tenderloin Recipe

Ingredients
  • 3 pounds beef tenderloin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons honey
  • 2 teaspoons thyme leaves
  • 2 teaspoons chopped fresh rosemary
  • 2 tablespoons chopped fresh parsley
  • 2-3 minced garlic cloves
  • ¼ cup butter, 2 tablespoons melted
Directions
  1. Preheat the oven to 425 F.
  2. Secure the meat with oven-safe threads. If the meat is very long, you can cut it in half for easier cooking.
  3. Rub the meat with salt and black pepper. Set aside.
  4. Whisk Dijon mustard, apple cider vinegar, and honey.
  5. In a separate bowl, combine chopped thyme, rosemary, parsley, minced garlic, and 2 tablespoons melted butter.
  6. Add the other 2 tablespoons butter to a hot skillet.
  7. Add the meat and sear until brown, about 2-3 minutes for each side.
  8. Remove from the heat and brush with the honey-mustard sauce, then spread the herb butter on top.
  9. Transfer to the oven and bake on the middle rack for about 20-25 minutes, or until desired doneness.
  10. Remove from the oven and let it rest for a few minutes before slicing.
