Basic Buttermilk Pancakes Recipe

Ingredients
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • ½ tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 2 cups buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 tablespoons salted butter, melted
  • Oil, for pan
Directions
  1. In a medium bowl, stir to combine flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk to combine buttermilk, eggs, vanilla extract, and melted butter.
  3. Pour wet ingredients into dry ingredients, and gently mix to combine, leaving some lumps; set aside.
  4. Heat a medium nonstick pan brushed lightly with oil over low to medium heat.
  5. Use a large ½ cup scoop or ladle to portion batter into pan (1 or 2 pancakes at a time depending on pan size).
  6. Cook for 2 to 3 minutes on the first side until golden brown, then flip and cook 1 to 2 minutes on remaining side.
  7. Transfer the pancake to a plate and repeat the process with the remaining batter.
  8. Serve pancakes warm with butter and maple syrup, if desired.
