Matcha Almond Overnight Oats Recipe

Ingredients
  • 2 cups old-fashioned rolled oats
  • ¼ cup chia seeds
  • 1 tablespoon + 1 teaspoon culinary-grade matcha powder
  • ½ teaspoon sea salt
  • 2 cups unsweetened vanilla almond milk
  • ½ cup maple syrup, divided
  • 2 teaspoons vanilla extract
  • ½ cup sliced almonds
  • ½ cup fresh blueberries
Directions
  1. Combine the oats, chia seeds, matcha powder, and sea salt in a large bowl.
  2. Stir in the almond milk, ¼ cup maple syrup, and vanilla extract until well combined.
  3. Let the oat mixture sit for 10 minutes, then stir again.
  4. Divide the oats between four jars using a scoop or large spoon.
  5. Cover and refrigerate the jars overnight or for at least 8 hours.
  6. Bring 2 tablespoons maple syrup to a boil in a small skillet over medium heat.
  7. Add the almonds, stirring to coat. Cook until the syrup has thickened and the almonds are golden (about 5 minutes). Remove from the pan to cool.
  8. To serve the matcha almond overnight oats, uncover and stir.
  9. Add some of the maple almonds and a few of the fresh blueberries.
  10. Drizzle on some of the remaining maple syrup.
  11. Enjoy for breakfast or as a snack.
