Cut off your mango cheeks to get two wedges. On each wedge, cut vertical lines down the center, applying enough pressure to get through the flesh, but not the skin.
Then, cut horizontal lines at your desired intervals to create a grid of mango squares. Invert the mango peel so that the chunks are on the outside, then remove them from the skin.
With a Y-shaped peeler, remove the mango peel in long strips, rotating all around the fruit until all the peel is removed. Then, slice off the cheeks of your mango.
If you have a fleshy mango, you can also cut off the two small edges that are left. Place the mango cheeks flat side down and slice them into any shape you want.
