Build Your Own Compound Butter With One Easy Formula

NEWS

By ALLI NEAL
Making compound butter is easy thanks to this formula; you just need about a tablespoon or two of your preferred flavoring for every stick of butter.
Soften the butter, whip it in a stand mixer until light and fluffy, mix in your flavorings, then roll and wrap it in parchment paper for storage.
Compound butter is highly customizable; fresh herbs and lemon juice create a classic version, while parsley, cilantro, and chiles mixed with red wine vinegar are great for steak.
You can make an Old Bay compound butter for seafood or go simple with garlic, lemon, and a medley of herbs. For rich breads and rolls, opt for honey lavender butter.
