When picking out corn for grilling, look for corn silk (the fine threads sticking out of the veggie) that is light brown or golden in color and is a bit tacky, not dry or squishy.
Each strand of corn silk connects to a kernel on the cob as a sort of pathway to pollination. Essentially, healthy corn silk equals corn kernels that are plump and juicy.
Light brown or golden silk means that the corn kernels are likely to be fully-developed and sweet, whereas a dry, dark or black silk indicates that the corn is way past its peak.
You should also ensure it has no bad odor, which indicates spoilage. Note that the silk starts to brown post-pollination, so a little coloration at the end of fresh silk is normal.
