While you may want to trash a ground beef that's pink in color, you can actually eat it as long as it's cooked per the United States Department of Agriculture (USDA) guidelines.

According to USDA, slightly pink beef is safe to eat if it was cooked to an internal temperature of at
least 160 degrees F, and a food thermometer was used to confirm it.

At 160 degrees F, harmful bacteria that can make you sick, such as E.coli, salmonella, and listeria, cannot survive. However, the beef can still remain slightly pink.
