For The Fluffiest Scrambled Eggs, Add A Splash Of Seltzer

Unflavored seltzer can make scrambled eggs fluffy and light by incorporating pockets of air — derived from the carbon dioxide bubbles in the drink — into the egg mixture.

Once exposed to heat, those carbon dioxide bubbles expand, creating a light and airy texture in your scramble that would otherwise require prolonged and intense whisking.

As a good rule of thumb, add one tablespoon of seltzer for every two eggs you want to scramble, and thoroughly stir the seltzer into your egg white and yolk mixture before cooking.

You can add the seltzer before or after mixing the yolks and whites. However, adding the seltzer after mixing will allow minimal agitation, keeping the bubbles from disappearing.

The seltzer added to your eggs should be used in place of milk or heavy cream, as using a combination of seltzer and another liquid might result in a soggy final product.
