The temperature of your grill plays a major role in achieving the perfect sear on your burger patty. The sweet spot to aim for is between 375 and 400 degrees Fahrenheit.
On a gas grill, this is usually medium-high heat. This, coupled with allowing the grill plenty of time to preheat, will help achieve the perfect sear on your burger.
Give it about 15 minutes to get the surface nice and hot before adding the burgers. Cook them for a few minutes depending on your desired internal temperature and color.
If your grill doesn't have a built-in thermometer, place your hand above the grill until it gets too hot. If you can comfortably stay there for four to five seconds, it's ready.
