To ripen peaches faster, set them stem-side down in a paper bag and roll the top down to seal it slightly. They should become soft, fragrant, and ripe after a day or two.
You should ripen peaches before storing them for later, too. Freezing them locks in their flavor, so if they taste good before storing, they'll taste good when you pull them out.
Peaches are climacteric fruits, so they keep ripening post-harvest, thanks to the ethylene gas they secrete. While peaches do ripen on their own, the paper bag speeds the process.
Thanks to the bag, the ethylene gas doesn’t escape but swirls around the peaches, ripening them faster. Unlike plastic bags, paper bags don’t trap moisture, which may produce mold.
