Pancake mix is an underestimated pantry staple with many secondary uses, one of which is whipping up sweet or savory breakfast biscuits simply by adjusting a few ingredients.
Typically, a pancake mix includes flour, sugar, baking powder or baking soda, and salt, among other additives, so you only have to switch up the ratios of the wet ingredients.
The key here is to make the batter significantly thicker than that of pancake batter, adding less water, vegetable oil, or egg to keep the moisture to a minimum.
Plus, keep the batter cold so it's as flaky as the best biscuits. So long as the dry mix is well incorporated, you can experiment with the wet ones, like using milk for water.
Finally, drop spoonfuls of dough onto a cookie sheet and bake for about 10 minutes or until they turn golden brown. You can even experiment with various mix-ins and toppings.
