Spiked, Smoky, And Flavorful All Describe This Traditional Mexican Salsa

Salsa borracha has a bold taste that comes from alcohol. Although some salsa borracha recipes use mezcal or tequila, most rely on beer's maltiness to enhance the flavor.
A 1/4 to 1/2 cup of beer is used as the liquid for simmering chili peppers or poured over and mixed in while the tomatillos, tomatoes, onion, garlic, cilantro, salt, and oil brown.
The other element that makes salsa borracha different is its smokiness from the layers of dried chilis and roasting or browning the ingredients before blending them.
Despite its strong smoky flavor, salsa borracha pairs well with chips, but is particularly refreshing on chicken, meat, and fish tacos. It is also great with barbacoa.
