While you might wince at the idea of tossing potatoes with mayonnaise, the condiment is primarily composed of eggs, oil, and acid, which help the spuds crisp up nicely.
Mayo typically gets its creaminess from a mixture of oil, egg yolks, and acid. Many recipes also already include salt and pepper, making it a flavorful swap for cooking oil.
In a TikTok video, user @eitan tosses potatoes with mayo, onion, garlic powder, paprika, parsley, salt and pepper before roasting them for a tender interior and crispy skin.
While many responses to the video express horror at the thought of adding mayonnaise to potatoes, one viewer writes, "People are forgetting what mayo is. It makes 100% sense."
