Enameled cast iron pots and pans can be a major workhorse in your kitchen, but they also have limitations. Despite the popular myth, they cannot prevent food from sticking.
These pans are not non-stick and can't be seasoned like an un-enameled cast iron. The myth likely stems from how similar they look to the non-stick ceramic-coated pots and pans.
While the enamel coating helps protect cast iron from acidic foods and rust, you may end up with a sticky, burned-on mess if you don't prep the pan before cooking.
