The Best Possible Stirring Method For Scrambled Eggs

NEWS

By HILARY WHEELAN REMLEY

To prevent scrambled eggs from burning, start at the edges and stir your eggs inwards towards the center of the pan, rather than stirring from the center of your pan outwards.
This method works because the eggs pooled at the edge of the pan are often more shallow than the eggs at the center, which means that they cook (and overcook) more quickly.
If you stir from the center, you risk browning and burning the scrambled eggs. Starting your stir at the periphery and working towards the middle of the pan solves this problem.
