While it seems counterintuitive, you should eat before attending a buffet. The reason is that your stomach is a flexible organ that expands based on the amount of food in it.
If you starve yourself, there's a good chance your stomach won't be ready to handle larger meals. This is why very hungry people sometimes get sick after big meals.
Eating less also means that your stomach will start signaling it is full after smaller meals. This means it's better to eat somewhat robust meals in the lead-up to a buffet.
You still don't want to eat right before the buffet. Some say to stop eating up to six hours before, while others recommend eating something light as soon as an hour or two before.
When at the buffet, start with simple carbohydrates and starchy foods, as they are processed a lot faster. Then, those will be out of your stomach while you're still at the table.
