Fish is a tasty source of protein, but it can also be a source of mercury, a neurotoxin. Both sharks and tuna contain high amounts, but tilefish stands far above the rest.
Tilefish is large and contains white flesh that tastes similar to shellfish. Clocking in at 1.123 parts per million (ppm) of mercury, it is above the FDA’s limit of 1 ppm in fish.
However, not all tilefish are equal. Those from the Gulf of Mexico have much higher levels (1.123 ppm) than those caught in the Atlantic, which have a mean mercury ppm of 0.144.
