Bumpy cake is a rich, chocolatey, and creamy Michigan dessert. Its most famous trait is its one-of-a-kind appearance, as it consists of a single, square layer of devil's food cake.
Then, rows of vanilla buttercream are piped across the top of the cake, and the whole thing is coated in fudge frosting, creating the visual effect of ridges on top of the cake.
Michigan bumpy cake was invented by Fred Sanders, owner of Detroit's Sanders Confectionary, in 1912. Sanders distributes bumpy cakes to grocery stores all around the state.
