The One Extra Ingredient That Helps Your Chicken's Breading Stick

When your fried chicken breading won’t stick, add cornstarch to the flour mix. Starch will absorb moisture from the egg wash and chicken, creating an adhesive for the breading.

Cornstarch is nearly pure starch — the key ingredient that allows flour to become sticky when mixed with moisture. Adding it to the flour mix gives you extra adhesiveness.

For every half cup of flour, add about 2 teaspoons of cornstarch. You can also use other starches, like potato starch, which will give a light, crispy texture to your breading.
