Person holding tomatoes
To enhance fresh tomatoes, consider sprinkling sugar on them. Sugar on ripe tomatoes makes them sweeter and a little juicier with a more full-bodied flavor profile.
Person adding sugar to stewed tomatoes

Person getting spoonful of sugar
To enhance a particularly sour tomato, slice it and add a small pinch of salt and a light dusting of refined sugar. Let it sweat for 5 minutes, flip it over, and do the same.
