While most dairy products contain lactose — a type of milk sugar that some people may find difficult to digest — Pecorino Romano is one Italian cheese variety that has no lactose.
Due to the cheese's lengthy aging process, which typically lasts from eight to 12 months, bacteria break down its lactose content and turn it into lactic acid.
As a result, Pecorino Romano is free of lactose, or at least contains only a slight amount of it. It is a blessing in disguise if you love cheese but are lactose intolerant.
