The Prep You Need To Know For The Best Grilled Scallops Ever

Scallops are a great choice for a backyard grill party but for best results, you absolutely need to prep them correctly, starting with buying the right variety.
Sea scallops are meatiest and larger than others. Pat the shucked mollusks dry, brush with olive oil, and sprinkle with salt and pepper to taste before grilling.
Once you've tasted scallops on their own (and liked it), go ahead and experiment with different seasoning combinations and marinades.
A good start is a simple citrusy honey marinade made by mixing olive oil, honey, smoked paprika, citrus juice, and garlic in a bowl.
If you want a bit of heat, try a chili honey glaze. Simmer honey, low-sodium soy sauce, rice vinegar, minced garlic, and chili paste until they thicken.
After you've grilled the scallops, use a brush to layer the glaze on top of each piece. Alternatively, you can also use the sauce for dipping.
