Why Celery Always Comes With Buffalo Wings

It just wouldn’t feel right if you ordered Buffalo chicken wings in a restaurant and received them without celery sticks and blue cheese dressing.
This pairing started in Buffalo, New York in 1964, when Frank and Teressa Bellissimo’s son Dominic and his friends were hanging out at the family's food and drink establishment.
They were getting hungry, so Teressa improvised. She made some wings with hot sauce and served them with leftover celery sticks from an antipasto platter.
​​The tasty combination stuck and served a purpose. For those who need a break from the hot sauce, celery is around 95% water and provides a cooling contrast to the spicy chicken.
