Wellness coach and recipe developer Miriam Hahn brings us this recipe and says, "Although mayonnaise potato salads have their place, this fresh herb potato salad with lemon mustard dressing is by far my favorite. It's a little fancier and can even make its way to the table for more elegant functions."

Gather the ingredients for herbed potato salad

To make this recipe, you'll need several things from the produce aisle. Pick up red potatoes, red onion, scallions, Italian parsley, fresh dill, chives, lemon, and garlic. "If you grow fresh herbs in your garden this is the perfect recipe for you," Hahn shares. To round out the dish, check your condiment and spice cabinet for salt, pepper, olive oil, apple cider vinegar, and grainy mustard.

Step 1: Put potatoes in a pot and boil

Put the potatoes in a pot with 1 teaspoon salt and cover with water. Bring to a boil, then reduce heat to low and cook for 5 minutes or until the potatoes are tender.

Step 2: Make the dressing

In a small bowl combine the olive oil, vinegar, mustard, lemon juice crushed garlic, remaining salt, and pepper.

Step 3: Drain the potatoes

Drain the potatoes and let them sit in a colander to cool for 10 minutes.

Step 4: Add the dressing to the warm potatoes

Add the potatoes to a large bowl and add the dressing.

Step 5: Toss with the other ingredients

Now add the red onion, scallions, Italian parsley, dill, and chives and toss.

Step 6: Serve the herbed potato salad

There are several ways you can customize the herbed potato salad based on your preference or what you have in the house. There are a couple of options on the potatoes if you want to swap those out. Yukon gold or fingerling potatoes will work. "I love working with these types of potatoes because the skin is very thin so there is no need to peel them. This is a huge time saver and I'm always on the look out for ways to cut corners. Russets don't work great here because they are a little crumbly, so I would avoid those," Hahn shares.

If you have other fresh herbs in mind, you can easily add more in or do some swapping. Cilantro, tarragon, oregano, or basil are all good choices. If you want to add other vegetables to the potato salad, it will add additional crispness and color. Consider cherry tomatoes, cucumbers, bell peppers, or blanched green beans for a fresh contrast. For a little heat, add some minced jalapeños, chopped pickled jalapeños, banana peppers, or red pepper flakes.

What can I pair with the herbed potato salad?

Herbed potato salad is a versatile side dish that can be served alongside a variety of main courses. It works with any sort of grilled entree like grilled chicken, steaks, fish, or burgers. Or any vegetarian option like veggie burgers, tofu skewers, seared tempeh, or pulled mushrooms. 

It's great paired with a sandwich like grilled cheese, turkey, tuna, or even a mock tuna made from chickpeas. "I love to have a batch of this made to keep in the fridge and pair with meals during the week," Hahn remarks.

Of course, this potato salad is perfect with picnic food like fried chicken, hot dogs, deviled eggs, baked beans, corn on the cob, and watermelon. This all-American dish also pairs well with Mediterranean cuisine like hummus and pita bread, falafel, olive tapenade, and grilled kabobs. You can serve it with other salads like coleslaw, kale salad, pasta salad, or a classic Caesar. A beautiful fruit salad also complements the fresh herbs in the potato salad.

Ingredients

  • 12 chopped red potatoes
  • 2 teaspoons salt, divided
